做法:春笋切成(chéng )片后加少许盐捞出后用(yòng )清水浸泡,生姜切片,葱切(qiē )成段(duàn )。锅烧热,倒入2勺(sháo )油,放入生(shēng )姜(jiāng )、春笋、牛肉片(piàn )、葱段(duàn )翻炒1分(fèn )钟左右。再加(jiā )入生抽、老抽、蚝油翻(fān )炒均(jun1 )匀,加入少量清水半掩(yǎn )住(zhù )春笋,盖上锅(guō )盖大火煮(zhǔ )开后转中火。煮到水快熬干的时候加入盐(yán ),翻炒均匀稍收汁时盖上锅盖焖。
