做法(fǎ ):春笋切成片后加少许盐捞出后用清水浸泡(pào ),生(shēng )姜切片,葱切成段。锅烧热,倒(dǎo )入(rù )2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段(duàn )翻炒1分钟左右。再(zài )加入生抽、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半掩住(zhù )春笋(sǔn ),盖(gài )上锅盖大(dà )火煮开后转中火。煮(zhǔ )到水快熬(áo )干的时(shí )候(hòu )加入盐,翻炒均匀稍收汁(zhī )时盖(gài )上锅(guō )盖焖。
