做法:春笋切成片后加少许盐捞出后用清水浸泡,生姜(jiāng )切(qiē )片,葱切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再(zài )加入(rù )生(shēng )抽、老抽、蚝油翻(fān )炒均匀(yún ),加(jiā )入(rù )少量清水半掩住春笋,盖上(shàng )锅盖大火煮开后转中火。煮(zhǔ )到水快熬干的时候加入(rù )盐(yán ),翻炒均匀稍收汁时盖(gài )上锅盖(gài )焖(mèn )。
