做法:洗净宰好鲫鱼,洗净淮山和(hé )薏米。用(yòng )清水把(bǎ )陈皮泡软(ruǎn ),拍裂一小块姜,热锅,用姜(jiāng )块在锅(guō )上擦(cā )一遍(biàn ),放两勺(sháo )油,待油六成热下(xià )鱼,煎至微黄。煮沸瓦煲里的清水,放(fàng )入煎煮好的鲫鱼(yú )和其(qí )他材料,武(wǔ )火煮沸,转中小火煲(bāo )一个半小时(shí ),下盐调味即可品尝。
